  • 1 cup heavy cream For a richer texture.
  • 3/4 cup granulated sugar Adjust sweetness to preference.
  • 1/2 cup unsweetened cocoa powder Use high-quality cocoa for best flavor.
  • 1 cup dark chocolate, chopped Choose chocolate with at least 60% cocoa.
  • 1 teaspoon vanilla extract Enhances flavor.
  • pinch salt Enhances sweetness and richness.

Method
 

Preparation
  1. In a saucepan, combine the milk, cream, sugar, cocoa powder, and salt.
  2. Heat over medium heat until the mixture is warm and the sugar is dissolved.
  3. Remove from heat and add chopped dark chocolate, stirring until melted and smooth.
  4. Stir in the vanilla extract.
  5. Chill the mixture in the refrigerator for at least 2 hours.
Churning
  1. Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions.
  2. Transfer to a container and freeze until firm, about 4 hours.
Serving
  1. Serve in bowls with a sprinkle of sea salt, fresh berries, or a drizzle of caramel sauce.

Notes

To store, place gelato in an airtight container in the freezer. To avoid ice crystals, press plastic wrap against the surface before sealing. If too hard, let sit at room temperature before serving.
