Preparation
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the dairy-free cream of mushroom soup, vegetable broth, mixed vegetables, onion, garlic powder, salt, and pepper.
- Pour the mixture into a greased casserole dish.
- Layer the frozen tater tots on top of the mixture.
- If using, sprinkle dairy-free cheese over the tater tots.
Cooking
- Bake for about 30-35 minutes or until the tater tots are golden brown and heated through.
- Let cool for a few minutes before serving.
Notes
For best results, you can assemble the casserole a day in advance and refrigerate it. Consider adding cooked ground turkey or lentils for a protein boost. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days.
