  • 1 bag frozen tater tots
  • 1 can dairy-free cream of mushroom soup
  • 1 cup vegetable broth
  • 1 cup mixed vegetables (like peas and carrots) can use fresh or frozen
  • 1 piece onion, diced
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup dairy-free cheese (optional) for added flavor

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the dairy-free cream of mushroom soup, vegetable broth, mixed vegetables, onion, garlic powder, salt, and pepper.
  3. Pour the mixture into a greased casserole dish.
  4. Layer the frozen tater tots on top of the mixture.
  5. If using, sprinkle dairy-free cheese over the tater tots.
Cooking
  1. Bake for about 30-35 minutes or until the tater tots are golden brown and heated through.
  2. Let cool for a few minutes before serving.

Notes

For best results, you can assemble the casserole a day in advance and refrigerate it. Consider adding cooked ground turkey or lentils for a protein boost. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days.
