  • 1 cup cauliflower rice Fresh or frozen
  • 1/2 cup marinara sauce Look for low-sugar options if desired.
  • 1 cup shredded mozzarella cheese Or use a dairy-free alternative for a dairy-free version.
  • 1/2 cup sliced pepperoni Can be omitted for a vegetarian option.
  • 1/4 cup green bell pepper, diced
  • 1/4 cup onion, diced
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine cauliflower rice, marinara sauce, Italian seasoning, salt, and pepper.
  3. Spread the mixture into a greased baking dish.
  4. Top with shredded mozzarella, pepperoni, bell pepper, and onion.
Baking
  1. Bake for 20-25 minutes until cheese is melted and bubbly.
  2. Let cool slightly before serving.

Notes

Serve hot on its own or with a side salad or garlic bread. For added flavor, drizzle with extra marinara sauce or a dash of hot sauce. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days.
