  • 1 lb Ground beef Use lean ground beef for a healthier option.
  • 1 packet Taco seasoning
  • 2 cups Cooked rice (white, brown, or Mexican-style) Cook rice according to package instructions.
  • 2 cups Nacho cheese Doritos (lightly crushed) Add more for extra crunch.
Toppings
  • 1 cup Shredded lettuce
  • 1 cup Diced tomatoes
  • 1 cup Shredded cheese (cheddar or Mexican blend)
  • 1/2 cup Sour cream
  • 1/2 cup Salsa or pico de gallo Choose your favorite brand.
  • 1 whole Sliced avocado or 1/2 cup Guacamole Adds creaminess.
  • 1/2 cup Black beans or corn kernels Optional for extra nutrients.

Method
 

Cooking the Meat
  1. Cook the ground beef in a pan over medium heat until browned, breaking it apart with a spatula while it cooks. Drain any excess fat.
  2. Add taco seasoning and follow the packet instructions for the amount of water. Let it simmer for about 5 minutes.
Assembling the Bowls
  1. Divide the cooked rice into bowls, creating a base for the toppings.
  2. Top each bowl of rice with the seasoned ground beef.
  3. Add a generous handful of crushed Doritos on top, along with your choice of fresh toppings like shredded lettuce, diced tomatoes, and cheese.
  4. Serve immediately with a dollop of sour cream, a spoonful of salsa, sliced avocado, or guacamole on the side.

Notes

For added flavor, cook rice in broth instead of water and consider adding jalapeños or hot sauce as toppings. Store leftovers in an airtight container in the fridge for up to 3 days.
