Preparation
  1. In a large bowl, combine the shredded chicken, chopped dill pickles, celery, and red onion.
  2. In a small bowl, mix the mayonnaise (or Greek yogurt), Dijon mustard, and fresh dill until smooth.
  3. Pour the dressing over the chicken mixture and stir until everything is well coated.
  4. Season with salt and pepper to taste.
  5. Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to develop.
  6. Serve cold, garnished with extra dill if desired.

Notes

Store any leftover salad in an airtight container in the refrigerator for up to 3 days. The flavors will continue to develop as it sits, making it even tastier the next day! Consider using smoked or grilled chicken for added flavor. If too thick, add a splash of pickle juice or milk to loosen it up. Don't skip the chilling time as it enhances the overall flavor.
