Preparation for Cookies
- Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a bowl, mix the melted butter with both types of sugar until well combined and fluffy.
- Add the egg and vanilla extract, mixing until smooth.
- In a separate bowl, sift together the plain flour, cornflour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
- Scoop out equal portions of dough and place them on the prepared baking tray, leaving space in between.
- Bake for 10-12 minutes until golden around the edges. Let them cool on a wire rack.
Preparation for Frosting
- In a mixing bowl, beat the softened butter and cream cheese together until smooth.
- Gradually add in the icing sugar, continuing to mix until the frosting is light and fluffy.
- Once the cookies are cooled, generously spread the frosting on top.
Notes
Store cookies in an airtight container at room temperature for up to 5 days. Unbaked dough or baked cookies can be frozen for up to 3 months.
