Ingredients
  

For the Cookies
  • 70 g Brown Sugar
  • 70 g Sugar
  • 115 g Butter (melted)
  • 1 unit Egg
  • 1 tsp Vanilla Extract
  • 220 g Plain Flour
  • 1 tbsp Cornflour
  • ½ tsp Baking Soda
  • ½ tsp Baking Powder
  • ½ tsp Salt
For the Cream Cheese Frosting
  • 90 g Butter (softened)
  • 90 g Cream Cheese
  • 250 g Icing Sugar

Method
 

Preparation for Cookies
  1. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a bowl, mix the melted butter with both types of sugar until well combined and fluffy.
  3. Add the egg and vanilla extract, mixing until smooth.
  4. In a separate bowl, sift together the plain flour, cornflour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  6. Scoop out equal portions of dough and place them on the prepared baking tray, leaving space in between.
  7. Bake for 10-12 minutes until golden around the edges. Let them cool on a wire rack.
Preparation for Frosting
  1. In a mixing bowl, beat the softened butter and cream cheese together until smooth.
  2. Gradually add in the icing sugar, continuing to mix until the frosting is light and fluffy.
  3. Once the cookies are cooled, generously spread the frosting on top.

Notes

Store cookies in an airtight container at room temperature for up to 5 days. Unbaked dough or baked cookies can be frozen for up to 3 months.
