Method
 

Preparation
  1. Place the chicken breasts in a single layer at the bottom of your slow cooker.
  2. Sprinkle the taco seasoning evenly over both sides of the chicken.
  3. Pour the entire jar of salsa over the top, ensuring all the meat is well-covered.
Cooking
  1. Cover the slow cooker with the lid and set the temperature to LOW for 4 to 6 hours, or HIGH for 2 to 3 hours.
  2. Ensure the chicken reaches an internal temperature of 165°F and shreds easily with a fork.
  3. Avoid lifting the lid during cooking to keep the heat trapped inside.
Plating
  1. Remove the chicken from the crockpot and place it on a large plate or cutting board.
  2. Use two forks to shred the meat into bite-sized pieces.
  3. Return the shredded chicken to the slow cooker and toss with the remaining juices and salsa.
  4. Serve immediately in warm tortillas, over rice, or on a crisp green salad, garnished with fresh cilantro and a squeeze of lime juice.

For the best results, use a high-quality salsa you enjoy. Chicken thighs can be used for extra tenderness. Do not discard the cooking liquid; it adds moisture and flavor to the shredded chicken.
