Preparation
- Start by patting the chicken dry with paper towels to help the seasoning stick better.
- In a small bowl, mix the salt, black pepper, oregano, and smoked paprika.
- Rub this spice blend evenly over both sides of the chicken.
- Place the chicken pieces into the bottom of your slow cooker in a single layer.
Cooking
- Pour the chicken broth into the bottom of the crockpot, being careful not to wash the spices off the meat.
- Sprinkle the minced garlic over the chicken and place the butter pats on top.
- Cover the slow cooker with the lid and set it to cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours.
- Avoid opening the lid during the cooking process to keep the heat consistent.
Plating
- Once the chicken reaches an internal temperature of 165°F, remove it from the crockpot and let it rest on a plate for five minutes.
- Stir the remaining juices in the crockpot and whisk in the lemon juice to brighten the flavor.
- Place the chicken on a serving platter or over a bed of pasta, then generously spoon the garlic butter sauce over the top.
- Garnish with fresh parsley and serve immediately.
Notes
Don’t overcook the chicken to prevent it from becoming tough. For a thicker sauce, add cornstarch mixed with cold water before serving.
