Ingredients
  

For the Pot Roast
  • 2-3 lbs beef pot roast choose well-marbled cuts like chuck or brisket
  • 1 cup pineapple chunks fresh or canned
  • 2-3 pcs chipotle peppers in adobo sauce adjust based on spice preference
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth can substitute with vegetable or chicken broth
For Serving
  • 1 cup rice cooked according to package instructions
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 2 pcs avocados, sliced
  • 1 pc lime, cut into wedges for squeezing on top

Method
 

Preparation
  1. In a slow cooker, combine the beef pot roast, pineapple, chipotle peppers, onion, garlic, and beef broth.
  2. Season with salt and pepper to taste.
Cooking
  1. Cover and cook on low for 6-8 hours or until the beef is tender.
  2. About 30 minutes before serving, cook rice according to package instructions.
Serving
  1. Once the beef is cooked, shred it with two forks.
  2. Serve the shredded beef over rice, topped with black beans, corn, avocado, and a squeeze of fresh lime juice.

Notes

Feel free to add crunchy tortilla chips on the side, drizzle with sour cream, or sprinkle cilantro.
