  • 4 pieces boneless, skinless chicken breasts
  • 1 can cream of chicken soup
  • 1 packet ranch dressing mix Optional, can be omitted or substituted
  • 1 cup chicken broth
  • to taste Salt and pepper
  • for serving Cooked rice or mashed potatoes For serving purposes

Method
 

Preparation
  1. Place the chicken breasts at the bottom of the crockpot.
  2. In a bowl, mix together the cream of chicken soup, ranch dressing mix, and chicken broth until well combined.
  3. Pour the mixture over the chicken in the crockpot.
  4. Season with salt and pepper to taste.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  6. Shred the chicken with two forks and stir it into the gravy.
Serving
  1. Serve hot over cooked rice or mashed potatoes.
Storage
  1. Store leftovers in an airtight container in the refrigerator for 3-4 days.
  2. Reheat in the microwave or on the stove until heated through.
  3. For longer storage, freeze for up to three months.

Notes

For extra flavor, consider adding garlic powder or onion powder. Chicken thighs can be used for a richer taste. For a thicker consistency, mix cornstarch with water toward the end of cooking.
