Preparation
- Preheat your oven to 425°F (220°C). This high temperature is crucial for achieving the crispy texture you desire.
- Prepare the radishes by washing them thoroughly and trimming the tops and tails.
- Boil the radishes in a pot of salted water for about 10 minutes or until they are tender but not mushy. You can easily pierce them with a fork to check doneness.
- Drain and dry the radishes to prevent excess moisture from affecting the crispiness.
Roasting
- Place the radishes on a baking sheet lined with parchment paper and gently smash each radish until it’s flat but still intact.
- Drizzle olive oil over the smashed radishes. Add minced garlic, salt, and pepper, ensuring everything is evenly coated.
- If using, sprinkle the Parmesan cheese on top.
- Roast in the oven for about 20-25 minutes or until they reach a beautiful golden-brown color, tossing them halfway through to ensure even cooking.
- Finish with fresh herbs while still warm.
