Ingredients
  

For the radishes
  • 1 bunch Radishes Choose firm radishes for the best results.
  • 2 tablespoons Olive Oil Avocado oil can be used as a substitute.
  • 3 cloves Garlic Fresh garlic preferred; garlic powder is acceptable.
  • to taste Salt
  • to taste Pepper
  • 1/4 cup Parmesan Cheese Omit for a dairy-free version.
  • a handful Fresh Herbs e.g., parsley or chives.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C). This high temperature is crucial for achieving the crispy texture you desire.
  2. Prepare the radishes by washing them thoroughly and trimming the tops and tails.
  3. Boil the radishes in a pot of salted water for about 10 minutes or until they are tender but not mushy. You can easily pierce them with a fork to check doneness.
  4. Drain and dry the radishes to prevent excess moisture from affecting the crispiness.
Roasting
  1. Place the radishes on a baking sheet lined with parchment paper and gently smash each radish until it’s flat but still intact.
  2. Drizzle olive oil over the smashed radishes. Add minced garlic, salt, and pepper, ensuring everything is evenly coated.
  3. If using, sprinkle the Parmesan cheese on top.
  4. Roast in the oven for about 20-25 minutes or until they reach a beautiful golden-brown color, tossing them halfway through to ensure even cooking.
  5. Finish with fresh herbs while still warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 375°F (190°C) to restore crispiness.
