  • 225 grams sharp white cheddar cheese, grated For a rich flavor.

Method
 

Cooking Preparation
  1. Preheat the oven to 230°C (450°F).
  2. Separate the cauliflower into bite-sized florets, slicing any larger florets in half for even roasting.
Seasoning the Cauliflower
  1. In a large mixing bowl, combine the florets with the olive oil, tossing thoroughly to coat each piece.
  2. Sprinkle the florets with Old Bay seasoning, chili pepper, and freshly ground black pepper. Toss well for even coverage.
Roasting
  1. Transfer the seasoned cauliflower to a foil-lined baking sheet, arranging in a single layer with cut sides down.
  2. Roast on the top oven rack for 15 minutes.
  3. While roasting, grate the sharp white cheddar and parmesan cheeses.
  4. Remove from oven and evenly distribute grated cheeses over the florets.
  5. Return to top rack and bake for an additional 7-10 minutes or until cheese is golden and crisp.
  6. Using a spatula, lift the crispy cheese and cauliflower onto a serving dish. Serve immediately.

Notes

For best results, dry the cauliflower florets after washing, avoid overcrowding the baking sheet, and feel free to experiment with spices! For a vegan option, consider using a vegan cheese substitute.
