Cooking Preparation
- Preheat the oven to 230°C (450°F).
- Separate the cauliflower into bite-sized florets, slicing any larger florets in half for even roasting.
Seasoning the Cauliflower
- In a large mixing bowl, combine the florets with the olive oil, tossing thoroughly to coat each piece.
- Sprinkle the florets with Old Bay seasoning, chili pepper, and freshly ground black pepper. Toss well for even coverage.
Roasting
- Transfer the seasoned cauliflower to a foil-lined baking sheet, arranging in a single layer with cut sides down.
- Roast on the top oven rack for 15 minutes.
- While roasting, grate the sharp white cheddar and parmesan cheeses.
- Remove from oven and evenly distribute grated cheeses over the florets.
- Return to top rack and bake for an additional 7-10 minutes or until cheese is golden and crisp.
- Using a spatula, lift the crispy cheese and cauliflower onto a serving dish. Serve immediately.

For best results, dry the cauliflower florets after washing, avoid overcrowding the baking sheet, and feel free to experiment with spices! For a vegan option, consider using a vegan cheese substitute.
