  • 1 cup cooked quinoa Make sure it is cooled.
  • 1 cup grated vegetables (e.g., zucchini, carrots, etc.) Feel free to use any grated vegetable.
  • 1/2 cup breadcrumbs Use gluten-free breadcrumbs if necessary.
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 1 tablespoon olive oil For cooking.
  • Optional: herbs and spices to taste Consider adding fresh herbs like parsley or spices like paprika.

Method
 

Preparation
  1. In a large bowl, combine cooked quinoa, grated vegetables, breadcrumbs, onion, garlic, salt, pepper, and cumin. Mix until well combined.
  2. Form the mixture into patties, about 1/4 inch thick.
Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Add patties to the skillet, cooking for about 4-5 minutes on each side until golden brown and crispy.
Serving
  1. Serve with a dipping sauce, in a bun, or alongside a fresh salad.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. They can also be frozen for 2-3 months. Reheat by baking in the oven at 350°F (175°C).
