Ingredients

For the Marinade
  • 6 cloves Garlic, minced For flavor.
  • 2 tablespoons Smoked Paprika For smokiness.
  • 1/4 cup Olive Oil Or substitute with another neutral oil.
  • 1/4 cup Lemon Juice Fresh is best.
  • 1 teaspoon Cayenne Pepper/Chili Flakes Adjust according to heat preference.
  • 1 teaspoon Salt Essential for flavor.
  • 1 teaspoon Pepper Essential for flavor.
  • 1 tablespoon Honey Optional for sweetness.
For the Chicken
  • 4 pieces Chicken Thighs or Drumsticks Bone-in, skin-on for juiciness and crispiness.

Method

Preparation
  1. In a mixing bowl, combine the minced garlic, smoked paprika, olive oil, lemon juice, cayenne pepper, salt, and pepper. If you prefer a sweeter marinade, add the honey.
  2. Place the chicken thighs or drumsticks in a large resealable bag or dish and pour the marinade over them. Ensure each piece is well coated.
  3. Seal the bag or cover the dish, then marinate in the refrigerator for at least 30 minutes, though overnight is best for maximum flavor.
Cooking
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.
  2. Arrange the marinated chicken on the baking sheet, skin side up, and bake for 35-40 minutes or until the skin is crispy and the internal temperature reaches 165°F (75°C).
  3. For extra crispy skin, switch to broil for the last 2-3 minutes, watching closely to prevent burning.
  4. Remove the chicken from the oven, let it rest for a few minutes, and serve hot.

Notes

Serve the Crispy Piri Piri Chicken with a side of roasted vegetables or fresh salad for a balanced meal. For extra kick, drizzle with lemon juice or serve with creamy dressing.
