Ingredients
  

Main Ingredients
  • 4 small small potatoes (russets or gold) Choose small potatoes for the best texture.
  • 4 tbsp butter (melted) Melt the butter before use.
  • 1/3 cup parmesan cheese (grated) Grate fresh parmesan for best flavor.
Seasonings
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp pepper

Method
 

Preparation
  1. Wash and slice the potatoes in half.
  2. Using a sharp knife, carefully score the inside of the potato surface.
  3. In a baking dish, pour the melted butter, parmesan cheese, and seasonings into the bottom. Stir to combine and spread the paste evenly over the bottom of the baking dish.
  4. Add in the potato halves, with the inside of the potato facing down in the parmesan paste.
Baking
  1. Bake at 415° for 25 minutes.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for about 2-3 days. Reheat in the oven for best texture.
