Fish and Marinade
  • 1 lb white fish fillets (such as Cod, Tilapia, or Halibut), cut into 1-inch cubes
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh parsley, finely chopped
Coating
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Cooking
  • 3 tablespoons butter
  • 1 tablespoon olive oil

Method
 

Preparation
  1. Use paper towels to pat the fish fillets completely dry. Cut into 1-inch bite-sized pieces.
  2. In a shallow bowl or zip-top bag, combine flour, garlic powder, paprika, salt, and black pepper. Mix well.
  3. Toss the fish pieces in the seasoned flour until coated. Shake off excess flour.
Cooking
  1. Heat a large skillet over medium-high heat and add olive oil and 1 tablespoon of butter until melted and bubbling.
  2. Add fish bites in a single layer, cooking for 3 to 4 minutes, turning once until golden brown and cooked through.
  3. Remove from heat, add remaining butter, lemon juice, and lemon zest to the pan.
  4. Gently toss the fish bites in the sauce for about 30 seconds until glazed.
  5. Sprinkle with fresh parsley and serve immediately while hot and crispy.

Notes

These fish bites are best served hot. They can be paired with tartar sauce, yogurt herb dip, or a fresh salad. Store leftovers in an airtight container in the refrigerator for up to 2 days.
