  • 4 pieces boneless, skinless chicken breasts (about 6 oz each)
  • 1/2 cup all-purpose flour
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs (beaten)
  • 1 cup panko breadcrumbs
  • 1/4 cup olive oil
  • 6 oz feta cheese (crumbled)
  • 2 tablespoons hot honey
  • 1 tablespoon fresh parsley (chopped, for garnish)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts completely dry with paper towels.
  3. Pound the chicken to a uniform thickness of 3/4-inch, if necessary.
  4. In three shallow dishes, mix flour, paprika, garlic powder, salt, and pepper; place beaten eggs in the second dish, and fill the third with panko breadcrumbs.
Breading
  1. Dredge each chicken breast in the seasoned flour, dip into eggs, then press into the breadcrumbs.
Cooking
  1. Heat olive oil in a large oven-safe skillet over medium-high heat until shimmering.
  2. Add chicken breasts and cook for 3-4 minutes per side until golden brown.
  3. Sprinkle crumbled feta cheese over the chicken and transfer to the oven.
  4. Bake for 15-20 minutes until chicken reaches 165°F and feta is slightly melted.
  5. Drizzle hot honey over the chicken and garnish with parsley.
Serving
  1. Let rest for 2-3 minutes before serving.

Notes

For a spicier version, blend the hot honey with chili flakes. Store leftovers in an airtight container for up to 3 days.
