Preparation
- Preheat your oven to 400°F (200°C).
- Pat the chicken breasts completely dry with paper towels.
- Pound the chicken to a uniform thickness of 3/4-inch, if necessary.
- In three shallow dishes, mix flour, paprika, garlic powder, salt, and pepper; place beaten eggs in the second dish, and fill the third with panko breadcrumbs.
Breading
- Dredge each chicken breast in the seasoned flour, dip into eggs, then press into the breadcrumbs.
Cooking
- Heat olive oil in a large oven-safe skillet over medium-high heat until shimmering.
- Add chicken breasts and cook for 3-4 minutes per side until golden brown.
- Sprinkle crumbled feta cheese over the chicken and transfer to the oven.
- Bake for 15-20 minutes until chicken reaches 165°F and feta is slightly melted.
- Drizzle hot honey over the chicken and garnish with parsley.
Serving
- Let rest for 2-3 minutes before serving.
Notes
For a spicier version, blend the hot honey with chili flakes. Store leftovers in an airtight container for up to 3 days.
