Ingredients

For the Marination
  • 2 pounds spare ribs, cut into individual pieces
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
For the Coating
  • 2 tablespoons all-purpose flour
  • 1 cup cornstarch
  • 1 cup buttermilk
  • Oil for frying Oil for frying Use enough oil to deep fry the ribs.

Method

Marination
  1. In a large bowl, combine garlic powder, onion powder, paprika, black pepper, and salt.
  2. Add the spare ribs and rub the spice mixture all over the meat.
  3. Let them marinate for at least 30 minutes, or refrigerate for a few hours for more intense flavor.
Preparation
  1. In a separate bowl, mix the all-purpose flour and cornstarch.
  2. Remove the marinated ribs from the bowl and dip each piece into the buttermilk, allowing any excess to drip off.
  3. Then, coat them in the flour and cornstarch mixture.
Frying
  1. Heat oil in a deep skillet or fryer to 350°F (175°C).
  2. Carefully place the coated ribs into the hot oil, frying them in batches for about 5-7 minutes or until they are golden brown and crispy.
Serving
  1. Remove the ribs and place them on a paper towel-lined plate. Serve hot with your favorite dipping sauce.

Notes

For optimal flavor, marinate overnight. Maintain oil temperature during frying to avoid greasy ribs. Rest fried ribs on paper towels to absorb extra oil.
