Chicken Preparation
  • 4 pieces chicken breasts Pound to even thickness for even cooking.
  • 1 cup almond flour Can substitute with regular flour if needed.
  • 1 cup grated parmesan cheese Use fresh for best flavor.
  • 2 eggs Beaten.
Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste Salt
  • to taste Pepper
Cooking
  • Olive oil for frying For pan-frying the chicken.
  • Marinara sauce for serving
  • Fresh basil for garnish (optional) Adds a fresh touch to the dish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix almond flour, parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  3. In another bowl, beat the eggs.
  4. Dip each chicken breast first in the egg, then coat with the almond flour mixture.
Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Cook each chicken breast for about 3-4 minutes on each side, or until golden brown.
  3. Place the cooked chicken breasts on a baking tray.
  4. Top each with marinara sauce and bake for 10-15 minutes.
  5. Garnish with fresh basil if desired and serve.

Notes

Serve hot and pair with spaghetti, salad, or garlic bread. Store leftovers in an airtight container for up to 3 days. Can freeze for up to 2 months.
