Preparation
- Preheat your oven to 400°F (200°C).
- In a bowl, mix almond flour, parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each chicken breast first in the egg, then coat with the almond flour mixture.
Cooking
- Heat olive oil in a skillet over medium heat.
- Cook each chicken breast for about 3-4 minutes on each side, or until golden brown.
- Place the cooked chicken breasts on a baking tray.
- Top each with marinara sauce and bake for 10-15 minutes.
- Garnish with fresh basil if desired and serve.
Notes
Serve hot and pair with spaghetti, salad, or garlic bread. Store leftovers in an airtight container for up to 3 days. Can freeze for up to 2 months.
