  • 1/2 cup shredded sharp cheddar cheese For a delicious cheesy flavor.
  • 1/4 cup grated parmesan cheese Optional for added flavor.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Grate the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth. Twist the towel and squeeze firmly to remove all excess liquid. Repeat this until the zucchini feels dry.
  3. In a large mixing bowl, combine the squeezed zucchini, beaten egg, breadcrumbs, cheddar cheese, parmesan cheese, garlic powder, onion powder, salt, and pepper.
  4. Mix everything together until the ingredients are well combined and the mixture holds its shape when pressed.
  5. Scoop about one tablespoon of the mixture and roll it into a small cylinder or 'tot' shape. Place it on the prepared baking sheet.
  6. Repeat with the remaining mixture, spacing the tots about an inch apart.
  7. Lightly spray the tops of the tots with cooking spray to help them brown.
Baking
  1. Bake for 15 to 20 minutes, or until the tots are golden brown and firm. Flip them halfway through the baking time for even crispiness.
  2. Remove from the oven and let them cool for a few minutes before serving.

Notes

To ensure the best flavor and texture, don't skip the step of thoroughly drying the zucchini. They can be served with dipping sauces like ranch or marinara.
