Method
Preparation
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the butternut squash cubes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
- Spread the seasoned squash on a baking sheet in a single layer.
Cooking
- Bake for 20-25 minutes, flipping halfway through, until the squash is golden brown and crispy.
- While the squash is baking, prepare the hot honey feta drizzle: In a small bowl, combine the crumbled feta, honey, red pepper flakes, and lemon juice. Mix until well combined.
Serving
- Once the squash bites are done, remove them from the oven and let them cool for a few minutes.
- Drizzle the hot honey feta sauce over the crispy butternut squash bites.
- Garnish with fresh parsley and serve warm.
Notes
Cut the butternut squash uniformly for even cooking. Avoid overcrowding the baking sheet to ensure all pieces are crispy. These bites can also be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to restore crispiness.
