Ingredients
  

For the Rolls
  • 8 sheets phyllo dough, thawed Keep covered with a damp cloth to prevent drying.
  • 8 ounces feta cheese, crumbled Can substitute with goat cheese or ricotta.
  • 2 tablespoons cream cheese
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons butter, melted
  • 2 tablespoons olive oil
  • 1/4 cup honey For drizzling.
  • 1/4 teaspoon chili flakes Can add more for extra heat.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine feta, cream cheese, lemon zest, and chopped parsley. Mix until creamy.
  3. Lay one sheet of phyllo dough on a clean surface and brush lightly with melted butter. Place another sheet on top and brush again.
  4. Spoon a small amount of the cheese mixture along one edge of the phyllo sheet. Roll tightly into a log and place on a baking sheet lined with parchment paper. Repeat with the remaining sheets.
  5. Brush the tops with olive oil and bake for 15-20 minutes, until golden and crispy.
  6. While the rolls bake, warm honey in a small saucepan over low heat and stir in chili flakes.
  7. Drizzle hot honey over baked rolls before serving.

Notes

Serve warm, drizzled with hot honey on a platter. These rolls can be paired with salads or cured meats. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10 minutes.
