  • 1/2 cup breadcrumbs Regular or gluten-free
  • 1/2 cup grated cheese (like parmesan or mozzarella) Use mozzarella for a milder flavor or parmesan for a bolder taste
  • 1/4 cup chopped fresh herbs (like parsley or basil)
  • 1 large egg, beaten For vegan version, use flax egg
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Olive oil spray For cooking

Method
 

Preparation
  1. Grate the zucchini and squeeze out excess moisture using a clean towel.
  2. In a mixing bowl, combine grated zucchini, breadcrumbs, cheese, herbs, egg, garlic, salt, and pepper. Mix until well combined.
  3. Preheat the air fryer to 375°F (190°C).
  4. Form the mixture into small patties and place them in the air fryer basket.
  5. Lightly spray the patties with olive oil spray.
Cooking
  1. Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  2. Serve warm as a snack or side dish.

Notes
