For the Sauce
  • 1 lb shrimp Peeled and deveined.
  • 1 cup heavy cream For a richer sauce.
  • 1 cup cherry tomatoes Halved.
  • 2 cups fresh spinach Washed.
  • 4 cloves garlic Minced.
  • 1 tbsp olive oil For sautéing.
  • Salt and pepper to taste

Method
 

Preparation
  1. Cook the linguine according to package instructions until al dente.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
Cooking Shrimp
  1. Add the shrimp to the skillet and cook until pink and opaque, about 3-4 minutes.
  2. Stir in the cherry tomatoes and spinach, cooking until the spinach wilts.
Combining
  1. Reduce the heat and add heavy cream to the skillet. Stir to combine and let simmer for a few minutes.
  2. Toss the cooked linguine in the sauce. Season with salt and pepper to taste.
Serving
  1. Serve warm, garnished with additional spinach or parmesan if desired.

Notes
