  • 1 lb shrimp, peeled and deveined Fresh or frozen, thawed if using frozen.
  • 2 cups spinach, fresh
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 cup heavy cream For a lighter version, substitute half and half.
  • 1/2 cup grated parmesan cheese Plus extra for serving.
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • for serving Cooked pasta or veggies Choose your favorite.

Method

  1. In a large skillet, heat olive oil over medium heat.
  2. Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.
  3. In the same skillet, add garlic and sauté for about 30 seconds until fragrant.
  4. Add cherry tomatoes and spinach, cooking until the spinach wilts down slightly.
  5. Pour in the heavy cream, stirring to combine, then add parmesan cheese. Season with salt and pepper to taste.
  6. Return the shrimp to the skillet and cook for an additional 2-3 minutes, letting the shrimp absorb the flavor.
  7. Serve over cooked pasta or with your choice of veggies for a complete meal.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove over low heat, adding a splash of cream or water as needed.
