- In a large skillet, heat olive oil over medium heat.
- Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.
- In the same skillet, add garlic and sauté for about 30 seconds until fragrant.
- Add cherry tomatoes and spinach, cooking until the spinach wilts down slightly.
- Pour in the heavy cream, stirring to combine, then add parmesan cheese. Season with salt and pepper to taste.
- Return the shrimp to the skillet and cook for an additional 2-3 minutes, letting the shrimp absorb the flavor.
- Serve over cooked pasta or with your choice of veggies for a complete meal.
Notes
If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove over low heat, adding a splash of cream or water as needed.
