  • 8 oz Spaghetti Use your favorite type of spaghetti
Main Ingredients
  • 2 cups Fresh spinach Use fresh spinach for best flavor
  • 1/2 cup Sun-dried tomatoes Chopped, if using whole ones
  • 1 cup Heavy cream Can substitute with half-and-half or plant-based alternatives
  • 1/2 cup Parmesan cheese Grated, for serving
  • 2 cloves Garlic Minced
  • 2 tbsp Olive oil For sautéing
  • 1 tsp Salt To taste
  • 1/2 tsp Pepper To taste

Method
 

Cooking
  1. Cook spaghetti according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add minced garlic and sauté until fragrant.
  4. Stir in spinach and sun-dried tomatoes, cooking until spinach is wilted.
  5. Pour in heavy cream and bring to a simmer.
  6. Mix in cooked spaghetti and parmesan cheese, stirring until well combined.
  7. Season with salt and pepper to taste.
  8. Serve immediately, garnished with extra parmesan and fresh black pepper.

Notes

For a lighter version, substitute half of the heavy cream with vegetable broth. Avoid freezing as cream may separate. Stir in red pepper flakes for heat or a squeeze of lemon juice for brightness.
