- Cook spaghetti according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant.
- Stir in spinach and sun-dried tomatoes, cooking until spinach is wilted.
- Pour in heavy cream and bring to a simmer.
- Mix in cooked spaghetti and parmesan cheese, stirring until well combined.
- Season with salt and pepper to taste.
- Serve immediately, garnished with extra parmesan and fresh black pepper.
Notes
For a lighter version, substitute half of the heavy cream with vegetable broth. Avoid freezing as cream may separate. Stir in red pepper flakes for heat or a squeeze of lemon juice for brightness.
