Preparation
- Cook the orzo pasta according to package instructions. Drain and set aside.
- In a large pan, heat olive oil over medium heat and add the salmon fillets. Cook for about 4-5 minutes on each side until golden and cooked through. Remove and set aside.
- In the same pan, add roasted red bell peppers and spinach, cooking until the spinach is wilted.
- Add the cooked orzo to the pan, along with Parmesan cheese, lemon juice, salt, and pepper. Mix well.
- Flake the cooked salmon and gently fold it into the orzo mixture.
- Adjust seasoning to taste and serve warm.
Notes
This dish is perfect for cozy dinners or entertaining guests. Serve it warm with lemon wedges and extra Parmesan cheese. Store leftovers in an airtight container in the refrigerator for up to 3 days. The dish does not freeze well.
