  • 2 fillets salmon fillets Fresh salmon for best results.
  • 1 cup orzo pasta Cook according to package instructions.
  • 2 cups fresh spinach Can substitute with other greens.
  • 1/2 cup roasted red bell peppers, diced Freshly roasted or jarred work well.
  • 1/2 cup Parmesan cheese, grated Can substitute with nutritional yeast for a vegan option.
  • 1 each lemon, juice Fresh lemon juice preferred.
  • 2 tablespoons olive oil For sautéing salmon and vegetables.
  • Salt, to taste Adjust based on preference.
  • Pepper, to taste Adjust based on preference.

Method
 

Cooking the Orzo
  1. Cook the orzo pasta according to package instructions. Drain and set aside.
Cooking the Salmon
  1. In a large pan, heat olive oil over medium heat and add the salmon fillets.
  2. Cook for about 4-5 minutes on each side until golden and cooked through. Remove and set aside.
Combining Ingredients
  1. In the same pan, add roasted red bell peppers and spinach, cooking until spinach is wilted.
  2. Add the cooked orzo to the pan, along with Parmesan cheese, lemon juice, salt, and pepper. Mix well.
  3. Flake the cooked salmon and gently fold it into the orzo mixture.
  4. Adjust seasoning to taste and serve warm.

Notes

Serve warm garnished with extra lemon wedges and a sprinkle of Parmesan cheese. This dish can be stored in an airtight container for up to 3 days in the refrigerator.
