  • 1 lb ground hamburger You can substitute with ground turkey or chicken
  • 4 large potatoes, peeled and diced Yukon Gold or Russet work well
  • 1 medium onion, chopped
  • 3 cups beef broth Ensure it's gluten-free if necessary
  • 1 cup heavy cream Can be substituted with half-and-half or coconut cream for lighter option
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Method
 

Cooking
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the ground hamburger and cook until browned, breaking it apart with a spatula as it cooks.
  3. Once the hamburger is browned, add the chopped onion and cook until translucent, about 3-4 minutes.
  4. Stir in the diced potatoes and beef broth, bringing the mixture to a boil.
  5. Reduce the heat and let it simmer until the potatoes are tender, about 15 minutes.
  6. Stir in the heavy cream and season with salt and pepper. Cook for an additional 5 minutes to let the flavors meld.
  7. Serve hot, garnished with shredded cheese and chopped green onions if desired.

Notes

Leftover soup can be stored in an airtight container in the refrigerator for up to 4 days. Can be frozen for up to 3 months. Add garlic, herbs, or Worcestershire sauce for extra flavor. Adjust the cream for desired richness.
