Main Ingredients
  • 1 pound ground beef May use leftover meat or different ground meats.
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups potatoes, peeled and diced Waxy potatoes like Yukon gold are recommended.
  • 4 cups beef broth Can substitute with vegetable broth for vegetarian option.
  • 1 cup heavy cream Can substitute with milk, but will be less creamy.
Seasoning
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Adjust to taste.
Optional Toppings
  • 1 cup shredded cheese For topping, optional.
  • to taste green onions or parsley For garnish, optional.

Method
 

Cooking
  1. In a large pot, brown the ground beef with the chopped onion and minced garlic until the meat is fully cooked. Drain excess fat.
  2. Add the diced potatoes and beef broth to the pot. Bring to a boil and then reduce heat to simmer for about 15-20 minutes, until the potatoes are tender.
  3. Stir in the heavy cream, salt, and pepper. Let it heat through for about 5 minutes.
  4. Serve hot, topped with shredded cheese and garnished with green onions or parsley if desired.

Notes

For extra creaminess, consider adding sour cream or experimenting with different types of cream. Leftovers can be stored in the refrigerator for up to 3-4 days, or frozen for up to 3 months.
