Method
 

Cooking
  1. In a large pot, cook the ground hamburger over medium heat until browned. Drain excess fat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  4. Stir in the heavy cream and season with salt and pepper.
  5. Let it heat through, then serve garnished with shredded cheese and green onions if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove, adding broth or water if thickened. This soup freezes well, store in a freezer-safe container for up to 3 months. Optional variations include adding peas, corn, or spices for heat.
