Ingredients
  

Pasta and Vegetables
  • 2 cups cooked pasta Use pasta shapes like rotini or penne.
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
Dressing
  • 1/2 cup mayonnaise Can substitute with Greek yogurt or vegan mayo.
  • 1/4 cup sour cream
  • 1 tablespoon Dijon mustard
  • to taste Salt and pepper
Garnish
  • as needed Fresh herbs (like parsley or basil) For garnish.

Method
 

Preparation
  1. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, and red onion.
  2. In a separate bowl, mix together the mayonnaise, sour cream, Dijon mustard, salt, and pepper until smooth.
  3. Pour the dressing over the pasta salad and mix until well combined.
  4. Garnish with fresh herbs before serving.
  5. Enjoy chilled!

Notes

Chill in the refrigerator to improve flavor. Store in an airtight container for 3 to 5 days. If dressing absorbs, add extra mayonnaise or sour cream.
