For the Meatballs
  • 1 pound ground chicken Lean ground chicken for moist texture
  • 1/2 cup breadcrumbs Can use gluten-free breadcrumbs if needed
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped For added flavor and freshness
  • 1 clove garlic, minced Enhances flavor
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil For browning the meatballs
For the Sauce
  • 8 ounces mushrooms, sliced Cremini or button mushrooms recommended
  • 1 small onion, diced Adds sweetness and flavor
  • 1 cup heavy cream
  • 1/2 cup chicken broth For moisture and flavor
  • 1 teaspoon dried thyme Can substitute with rosemary or sage

Method
 

Preparation
  1. In a bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, garlic, salt, and pepper. Mix well and form into meatballs.
  2. Heat olive oil in a skillet over medium heat, add meatballs and cook until browned on all sides. Remove and set aside.
Cooking
  1. In the same skillet, add onions and mushrooms; sauté until softened.
  2. Stir in heavy cream, chicken broth, and thyme; bring to a simmer.
  3. Return meatballs to the skillet and simmer in the sauce for about 10 minutes. Serve hot.

Notes

Serve over rice, pasta, or mashed potatoes for a complete meal. Store leftovers in an airtight container in the refrigerator for up to three days, or freeze for up to three months.
