Ingredients
  

Truffle Mixture
  • 1 cup heavy cream
  • 8 oz white chocolate, chopped Use high-quality for best flavor.
  • 1/4 cup lemon juice Freshly squeezed is preferred.
  • 1 each zest of 1 lemon Use fresh lemon zest for better flavor.
  • 1/2 cup powdered sugar
  • 1/2 cup crushed graham crackers For coating the truffles.
  • 1 pinch salt

Method
 

Preparation
  1. In a saucepan, heat the heavy cream over medium heat until it starts to simmer.
  2. Remove from heat and add the chopped white chocolate, stirring until melted and smooth.
  3. Stir in the lemon juice, lemon zest, powdered sugar, and a pinch of salt until well combined.
  4. Refrigerate the mixture for about 2 hours, or until firm.
Forming Truffles
  1. Once firm, use a small scoop or your hands to form the mixture into small balls.
  2. Roll each ball in crushed graham crackers to coat.
  3. Place the truffles on a parchment-lined tray and refrigerate until ready to serve.

Notes

Store in an airtight container in the refrigerator for up to one week. Can be frozen for up to three months.
