  • 8 ounces Fettuccine or Linguine (Can substitute with gluten-free pasta) Choose your preferred pasta type.
  • 2 tablespoons Olive Oil For sautéing.
  • 1 medium Onion (Chopped)
  • 3 cloves Garlic (Minced)
  • 1 cup Bell Pepper (Red or Yellow) (Chopped) For color and crunch.
  • 1 can Coconut Milk (Full-fat preferred) Recommended for richness.
  • 1 tablespoon Jamaican Jerk Seasoning Adjust to taste.
  • 2 tablespoons Fresh Lime Juice To brighten flavors.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Pepper Adjust to taste.
  • 1/4 cup Fresh Cilantro (Chopped) For garnish.
  • 2 wedges Lime (For serving)

Method
 

Cooking the Pasta
  1. Start by cooking the pasta in a large pot of boiling salted water according to package instructions until al dente. Drain and set aside.
Sautéing Vegetables
  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent—about 3 to 4 minutes.
  2. Stir in the chopped bell pepper and cook for another 2 minutes until slightly softened.
Cooking the Shrimp
  1. Add the large shrimp to the skillet, cooking until they turn pink (about 2-3 minutes), stirring frequently.
  2. Pour in the coconut milk, stirring to combine with the vegetables and shrimp.
Finishing the Sauce
  1. Add the Jamaican jerk seasoning, lime juice, salt, and pepper. Adjust the seasoning to taste, allowing the mixture to simmer for 5-7 minutes until slightly thickened.
Combining Pasta and Sauce
  1. Toss the cooked pasta in the creamy sauce until well-coated.
  2. Finally, remove from heat and garnish with fresh cilantro and lime wedges before serving.

Notes

For best flavor, use fresh shrimp. Adjust the jerk seasoning based on spice tolerance. Leftovers can be stored in an airtight container for up to 3 days.
