  • 1 pound shrimp, peeled and deveined Fresh or thawed frozen shrimp
  • 4 cloves garlic, minced
  • 1 cup heavy cream Can substitute with half-and-half
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
For the mashed potatoes
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk Use warm milk for smoother consistency
  • 1/4 cup sour cream For creaminess
For garnish
  • Chopped parsley For garnish

Method
 

Preparation
  1. Boil potatoes in salted water until tender, then drain and mash with milk and sour cream.
Cooking
  1. In a large skillet, heat olive oil and butter over medium heat.
  2. Add minced garlic and cook until fragrant, about 1 minute.
  3. Add shrimp and season with salt and pepper, cooking until shrimp are pink and opaque, about 3-4 minutes.
  4. Pour in heavy cream and simmer until slightly thickened, stirring occasionally.
  5. Serve shrimp over mashed potatoes and garnish with chopped parsley.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently, adding a splash of milk if needed.
