  • 1 pound large, peeled, and deveined shrimp fresh or frozen
  • 4-5 cloves fresh garlic, minced adjust based on taste
  • 2 tablespoons unsalted butter for a rich flavor
  • 1 tablespoon olive oil or avocado oil for a lighter option
  • 1 cup heavy cream substitute half-and-half for a lighter version
  • ¾ cup freshly grated Parmesan cheese for a savory finish
  • 2 cups fresh baby spinach or kale for a heartier choice
  • Salt and pepper to taste
  • 2 tablespoons fresh lemon juice or white wine for depth
  • Chopped parsley or basil for garnish

Method
 

Preparation
  1. Rinse shrimp under cold water and pat dry with paper towels.
  2. Season shrimp lightly with salt and pepper.
Cooking
  1. In a large skillet, heat olive oil and butter over medium heat.
  2. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add seasoned shrimp in a single layer, cook for 2-3 minutes on each side until pink and opaque.
  4. Remove shrimp from skillet and set aside.
  5. In the same skillet, lower heat and pour in heavy cream, stirring and scraping the bottom.
  6. After 2 minutes, add grated Parmesan cheese and fresh spinach, stir until cheese is melted and spinach is wilted.
  7. Return shrimp to skillet, add fresh lemon juice, and stir to combine, cooking for another minute.
Serving
  1. Garnish with chopped parsley or basil, and serve over pasta, rice, or with crusty bread.

Notes

For storing, let cool, transfer to an airtight container, and refrigerate for up to 3 days. Gently reheat before serving. Avoid freezing.
