Creamy Garlic Parmesan Chicken

Ingredients
  

For the chicken
  • 1.5 lbs Boneless skinless chicken breasts, sliced into thin cutlets
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
For the sauce
  • 6 cloves Garlic, finely minced
  • 1 cup Heavy cream
  • 0.5 cup Low-sodium chicken broth
  • 0.75 cup Grated Parmesan cheese, freshly grated Freshly grated is best
  • 1 teaspoon Dried oregano
For garnish
  • to taste Fresh parsley, chopped For garnish

Method
 

Preparation
  1. Pat the chicken breasts dry with paper towels.
  2. In a small bowl, mix salt, pepper, garlic powder, and onion powder. Sprinkle this mixture evenly over both sides of the chicken.
Cooking
  1. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
  2. Once hot, add the chicken and cook for 5-7 minutes per side until golden brown and cooked through. Remove chicken from the pan and set aside.
  3. Lower the heat to medium and add the remaining tablespoon of butter to the same skillet. Once melted, add minced garlic and cook for about 1 minute until fragrant.
  4. Pour in the chicken broth and scrape up the browned bits from the bottom of the pan. Stir in heavy cream and dried oregano, then simmer for 2-3 minutes.
  5. Reduce heat to low and stir in grated Parmesan cheese, stirring until melted and sauce thickens slightly.
  6. Place the chicken cutlets back into the skillet, spooning the creamy sauce over them. Let simmer for another minute to warm through.
  7. Garnish with fresh parsley and serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove, adding a splash of chicken broth or cream to loosen the sauce.
