  • 2 cups roasted corn kernels Use fresh or frozen roasted corn.
  • 1 cup cream cheese Softened, at room temperature.
  • 1/2 cup sour cream Regular or lactose-free.
  • 1/2 cup mayonnaise Regular or vegan option.
  • 1 cup cotija cheese Crumbled, can substitute with feta.
  • 1 unit lime Juiced.
  • 1 teaspoon chili powder Adjust according to heat preference.
  • To taste Salt and pepper
  • For garnish Chopped cilantro Optional, for decoration.

Method
 

Preparation
  1. In a large bowl, combine the roasted corn kernels, cream cheese, sour cream, and mayonnaise.
  2. Mix until smooth and well combined.
  3. Stir in cotija cheese, lime juice, chili powder, salt, and pepper.
  4. Adjust seasoning as needed.
  5. Transfer the dip to a serving dish and garnish with chopped cilantro if desired.
  6. Serve with tortilla chips or fresh veggies.

Notes

Store leftovers in an airtight container in the refrigerator for 3-5 days. For freezing, keep fresh for up to 3 months. Stir before serving again as it may thicken.
