Ingredients
  

Pasta and Vegetables
  • 8 oz pasta (penne or fusilli)
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 medium red onion, finely chopped
Dressing
  • 1 cup plain Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, chopped
  • Salt and pepper to taste

Method
 

Preparation
  1. Cook the pasta according to package instructions. Drain and allow to cool.
  2. In a large bowl, combine the cooled pasta, cucumber, cherry tomatoes, and red onion.
  3. In a separate bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, dill, salt, and pepper.
  4. Pour the dressing over the pasta salad and mix well to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Store in an airtight container in the refrigerator for 2-3 days. If made ahead, stir before serving to refresh.
