Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cook the linguine according to package instructions until al dente. Drain and set aside.
Sauce Preparation
  1. In a large saucepan over medium heat, melt the butter. Add minced garlic, and sauté for 1-2 minutes until fragrant.
  2. Stir in the cottage cheese, 1/2 cup of freshly grated Parmesan, salt, and black pepper. Stir until well combined and creamy.
  3. Add the drained linguine to the saucepan, tossing to coat the pasta evenly with the sauce.
Baking
  1. Transfer the mixture to a greased baking dish. If desired, sprinkle the top with additional grated Parmesan cheese and chopped parsley.
  2. Bake for 20-25 minutes, or until bubbly and slightly golden on top.
  3. Remove from the oven and let cool for a few minutes before serving.

Notes

For an even creamier texture, blend the cottage cheese before adding it to the saucepan. Feel free to experiment with different types of pasta or add your favorite veggies like spinach, broccoli, or mushrooms for extra nutrition.
