  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup cooked chicken, shredded Can use rotisserie chicken for convenience.
  • 1 package cheese tortellini (9 ounces)
  • 1 cup heavy cream Substitute with half-and-half for a lighter version.
  • 1 cup spinach, chopped Fresh spinach preferred.
  • Salt and pepper to taste Be cautious as chicken broth can be salty.

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat. Add the diced onion and cook until softened.
  2. Stir in the minced garlic and cook for an additional minute.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the cooked chicken and tortellini, and cook according to package instructions.
Finishing Touches
  1. Reduce heat and stir in the heavy cream and chopped spinach.
  2. Season with salt and pepper to taste.
  3. Serve hot, garnished with Parmesan cheese.

Notes

Leftover soup can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently, adding chicken broth if the soup thickens too much.
