  • 1 pound chicken breast, diced Use fresh chicken for best results.
  • 2 cloves garlic, minced Add flavor by sautéing with chicken.
  • 1 cup heavy cream Substitute with dairy-free cream if needed.
  • 1 cup chicken broth Low-sodium option can be used.
  • 1 cup spinach, chopped Fresh spinach is preferred.
  • 1/2 cup Parmesan cheese, grated Use fresh grated cheese for better flavor.
  • Salt and pepper to taste

Method
 

Preparation
  1. Cook the gnocchi according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until fully cooked, about 5-7 minutes.
  3. Add the minced garlic and cook for an additional 1 minute until fragrant.
  4. Pour in the chicken broth and heavy cream, stirring to combine.
  5. Add the chopped spinach and cook until wilted.
  6. Stir in the cooked gnocchi and grated Parmesan cheese. Season with salt and pepper to taste.
  7. Serve warm and enjoy.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on low heat, adding a splash of broth or cream to maintain creaminess.
