Creamy Chicken and Wild Rice Soup

Ingredients
  

Main Ingredients
  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup uncooked wild rice blend
  • 1 medium yellow onion, diced
  • 3 medium carrots, peeled and sliced into rounds
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 6 cups halal chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
Creamy Base
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 1 1/2 cups heavy cream or half-and-half
  • 2 cups fresh spinach (optional, for extra greens) Can be added for nutrition.

Method
 

Preparation
  1. Melt 2 tablespoons of butter in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery. Sauté for about 5 to 7 minutes until the vegetables are soft.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Stir in the chicken pieces, wild rice, chicken broth, thyme, rosemary, salt, and pepper. Bring the mixture to a boil.
  4. Reduce the heat to low, cover the pot, and let it simmer for 40 to 45 minutes. The rice should be tender and the chicken cooked through.
Creating the Creamy Base
  1. In a small saucepan, melt the remaining 2 tablespoons of butter over medium heat. Whisk in the flour and cook for 1 minute to create a roux.
  2. Slowly whisk the heavy cream into the roux until smooth and thickened.
  3. Pour the cream mixture into the large soup pot. Stir well to combine everything.
  4. If using spinach, stir it in now and let it wilt for 2 minutes.
  5. Taste the soup and add more salt or pepper if needed. Serve hot.

Notes

Pair with crusty bread or buttery rolls for dipping. Garnish with fresh herbs for added flavor.
