Pasta
  • 8 oz fettuccine or penne pasta
Chicken
  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning Adjust based on spice preference.
Sauce
  • 2 tablespoons olive oil For cooking the chicken.
  • 4 cloves garlic, minced Enhances flavor.
  • 1 cup heavy cream For a rich, creamy sauce.
  • 1 cup shredded Parmesan cheese Use freshly grated for best flavor.
  • 1 cup cherry tomatoes, halved Adds freshness and color.
  • Salt and black pepper, to taste

  • Fresh parsley, for garnish

Method
 

Preparation
  1. Cook the pasta following package instructions until al dente. Drain and set aside.
  2. Season the chicken breasts with Cajun seasoning, ensuring they are evenly coated.
Cooking
  1. In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side or until fully cooked.
  2. Remove the chicken from the skillet and let it rest before slicing.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds or until fragrant.
  4. Pour in the heavy cream and scrape up any browned bits from the bottom of the pan. Stir in the Parmesan cheese until melted and smooth.
  5. Add the halved cherry tomatoes and cooked pasta into the sauce. Mix everything until well-coated.
  6. Slice the cooked chicken and arrange it on top of the pasta. Season with additional salt and pepper to taste.
  7. Garnish with fresh parsley before serving. Enjoy!

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over low heat with a splash of cream or stock to prevent drying out. Tips: Use freshly grated Parmesan for the best flavor and adjust Cajun seasoning to taste.
