Preparation
- Cook the pasta following package instructions until al dente. Drain and set aside.
- Season the chicken breasts with Cajun seasoning, ensuring they are evenly coated.
Cooking
- In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side or until fully cooked.
- Remove the chicken from the skillet and let it rest before slicing.
- In the same skillet, add minced garlic and sauté for about 30 seconds or until fragrant.
- Pour in the heavy cream and scrape up any browned bits from the bottom of the pan. Stir in the Parmesan cheese until melted and smooth.
- Add the halved cherry tomatoes and cooked pasta into the sauce. Mix everything until well-coated.
- Slice the cooked chicken and arrange it on top of the pasta. Season with additional salt and pepper to taste.
- Garnish with fresh parsley before serving. Enjoy!
