  • 2 tablespoons Cajun seasoning
  • 1 cup rice Use white or brown rice depending on preference.
  • 2 cups chicken broth Ensure it is gluten-free if needed.
  • 1 cup heavy cream Can substitute with half-and-half for a lighter option.
  • 1/2 cup grated Parmesan cheese Use reduced-fat if desired.
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large skillet, heat olive oil over medium heat.
  2. Season the chicken breasts with Cajun seasoning, salt, and pepper.
  3. Cook the chicken in the skillet until fully cooked and golden brown, about 6-7 minutes per side. Remove and let it rest.
Cooking the Rice
  1. In the same skillet, add the chicken broth and bring to a simmer.
  2. Stir in the rice and cover; cook until the rice is tender and the broth is absorbed.
Finishing Touch
  1. Lower the heat and add heavy cream and Parmesan cheese to the skillet, mixing until creamy.
  2. Slice the chicken and serve it on top of the rice mixture.
  3. Garnish with chopped parsley before serving.

Notes

For best flavor, marinate chicken in Cajun seasoning for a few hours or overnight. Leftovers can be stored in an airtight container for 3-4 days in the refrigerator or frozen for up to 2 months.
