Preparation
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan with a little butter or non-stick spray.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate medium bowl, mix the orange juice, orange zest, melted butter, beaten egg, and vanilla extract until well combined.
- Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently with a spatula just until the flour disappears. Do not overmix.
- Gently fold in the cranberries. If using frozen berries, do not thaw them first.
- Pour the batter into the prepared loaf pan and smooth the top with your spatula.
Baking
- Bake for 55 to 60 minutes. The bread is done when a toothpick inserted into the center comes out clean or with just a few moist crumbs.
- Remove the pan from the oven and let it cool for 10 minutes. Then, turn the loaf out onto a wire rack to cool completely before slicing.
Notes
To keep your bread fresh, store it in an airtight container at room temperature for up to 3 days. It can be frozen for up to 3 months. For a variation, add nuts or other dried fruits.
