Ingredients

Dough Base
  • 1 tube 1 tube (8 oz) refrigerated crescent dough or 1 sheet of puff pastry Choose crescent dough for ease or puff pastry for a flakier bite.
Filling
  • 8 oz 8 oz wheel of Brie cheese, chilled Do not remove the rind; it's edible.
  • 1/2 cup 1/2 cup whole berry cranberry sauce Whole berry sauce is preferable for texture.
  • 1/4 cup 1/4 cup chopped pecans or walnuts Pecans or walnuts can be mixed for variety.
  • 2 tablespoons 2 tablespoons honey or maple syrup Drizzle before serving.
  • 1 sprig Fresh rosemary sprigs for garnish Add for a festive touch.
  • 1 serving Cooking spray or melted butter for the tin To grease the muffin tin.

Method

Preparation
  1. Preheat your oven to 375°F (190°C). Lightly grease a 24-cup mini muffin tin with cooking spray.
  2. Unroll the crescent dough or puff pastry on a lightly floured surface. Pinch any seams together if using crescent dough.
  3. Use a knife or pizza cutter to cut the dough into 24 equal-sized squares.
  4. Press each dough square into a slot in the mini muffin tin, making sure the edges come up the sides to form a small cup.
  5. Cut the Brie cheese into small cubes (about 1/2 inch to 3/4 inch). You do not need to remove the white rind; it is edible and delicious.
  6. Place one cube of Brie into each dough cup.
  7. Top the cheese with a generous teaspoon of cranberry sauce.
  8. Sprinkle the chopped pecans or walnuts over the top of the cranberry sauce.
Baking
  1. Bake for 10 to 12 minutes, or until the pastry edges are golden brown and the cheese is bubbly.
  2. Remove from the oven and let them cool in the pan for 5 minutes. This helps the cheese set slightly so they are easier to remove.
  3. Drizzle with a little honey or maple syrup and garnish with a tiny piece of fresh rosemary before serving.

Notes

These bites are best served warm. You can also prepare them ahead of time and refrigerate until ready to bake. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
