  • 1 lb crab meat Use fresh crab meat for the best flavor.
  • 2 cups seafood broth
  • 1 cup heavy cream Can substitute with coconut cream for dairy-free.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup corn kernels
  • 1 medium bell pepper, diced
  • 2 tablespoons butter
  • 1 teaspoon Old Bay seasoning Adjust according to taste.
  • to taste Salt and pepper
  • for garnish Chopped parsley

Method
 

Preparation
  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and bell pepper, and sauté until softened.
  3. Stir in the minced garlic and cook for an additional 1-2 minutes.
Cooking
  1. Add the seafood broth and bring to a simmer.
  2. Stir in the heavy cream and Old Bay seasoning, and season with salt and pepper.
  3. Add the crab meat and corn, and cook until heated through, about 5-10 minutes.
  4. Adjust seasoning if necessary, then serve hot, garnished with chopped parsley.

Notes

Pairs well with crusty bread, a green salad, or served over rice. Store leftovers in an airtight container for up to 3 days.
