Ingredients
  

Pasta and Vegetables
  • 8 oz pasta (bowtie or rotini) Cook until al dente.
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (canned or frozen)
  • 1 cup black beans, drained and rinsed
  • 1/2 cup green onions, sliced
  • 1/4 cup cilantro, chopped
Dressing and Seasoning
  • 1 cup ranch dressing
  • to taste salt and pepper Season to taste.

Method
 

Preparation
  1. Cook the pasta according to package instructions until al dente. Drain and let cool.
  2. In a large bowl, combine cooked pasta, cherry tomatoes, corn, black beans, red bell pepper, green onions, and cilantro.
  3. Add ranch dressing and toss to coat.
  4. Season with salt and pepper to taste.
  5. Serve immediately or chill in the refrigerator before serving.

Notes

For best flavor, allow the salad to chill in the refrigerator for at least an hour before serving. It's best consumed within 3 days. If the pasta absorbs too much dressing, add a splash of ranch dressing before serving again.
